The MacBook Air M1 chip is only able to connect to a single external monitor natively however, using an external DisplayLink Adapter I am able to connect two or more external displays. DisplayLink adapter (only for M1 MacBook Air) I then connect all my peripherals either to the monitor, docker or directly to the MacBook.
